Lemon Shrimp Pasta


2 lbs. Peeled and Deveined Shrimp

3 Cloves Garlic

1 Yellow onion

3 tbsp. Olive oil

4 tbsp. butter

1/4 cup fresh lemon juice

1/2 cup chives

4 cups arugula

1/4 tsp crushed red pepper

1 packet brown rice spaghetti ( can sub for regular pasta)

Salt and pepper to taste

1) Bring a pot of water to a boil. Once boiling salt and add pasta. Reserve 1 cup pasta water for sauce.

2) in a sauté pan heat oil, and sauté onion for 3 minutes or until soft. Add in the garlic and cook for about 1 minute. Add in butter and let it melt. Add in the reserved pasta water and cook down for about 2 minutes.

3) Once butter is melted add in the lemon juice and shrimp and cook for 3 minutes. Shrimp should be in the shape of a C if cooked you do not want an O shrimp. C=cooked O=overcooked

4) Once shrimp is cooked add in the chives, crushed red pepper and arugula until the arugula is wilted.

5) add your shrimp and sauce onto the pasta and toss.

6) Serve and enjoy!
